Avocados From Mexico


I was selected to host a party celebrating the delicious wonders of Avocados from Mexico. The lovely marketers at www.houseparty.com just shipped a box full of goodies to help me host. The goodie kit includes a gift card to help me with the party expenses chip baggie clips for my guests, a cutting board, theme poster and more.

You too can be selected as a host by enrolling here I am particularly tickled by the idea of hosting a Martha Stewart Craft Party or a Betty Crocker cookie party.

This is a really neat opportunity to help marketers reach us with very creative campaigns. It is also a chance for us to practice hospitality and enjoy the company of our friends and family. Sadly; we are a generation prone to isolation with an average of 2.1 friends per person. Let's change that!

Our Blessings

This week the sales and deals are a bit low. This coincides with marketing strategies which keep the best deals aligned with the timing in which most people receive paychecks. This coming weekend we will be traveling to the Desiring God Conference in Minneapolis. We are proud of our costs so far. Separate from the conference fees we were able to get super saver fares with American for $69 each way. For our hotel we selected Hotwire and snagged a deal for $61 per night at the Hilton. I will be shopping for car rental probably also using Hotwire.

I invite you to celebrate your blessings and contemplate upon the goodness of The King as you consider the following statistics:

Friday's Chinese Take Out (Fried Rice)


Starting today each Friday I will post an easy and affordable Chinese recipe to help you quench the cravings for take out. Today we start with:

Fried Rice

3 cups of leftover steamed rice stored overnight in the refrigerator
3 eggs
5 green onions (half a bunch)
5 slices of smoked ham or smoked bacon precooked
1/2 cup of soy sauce
1/2 teaspoon white pepper (adjust to preference)
1/2 teaspoon MSG I prefer Ajinomoto over Accent (you may skip this part if you are allergic)
4 tablespoons of oil

-optional ingredients-
leftover cooked shrimp
sauteed cubed carrots or frozen peas
leftover cooked chicken
water chestnuts

UTENSILS
Wok or large skillet
mixing bowl
clean spray bottle
wooden spoon
spatula
paper towels

STEPS

  1. Chop onions and meat into small squares and set aside
  2. Heat wok or skillet with 2 tablespoons of oil until a drop of water sizzles.
  3. Crack eggs open and season with a pinch of white pepper, salt and MSG.
  4. Pour eggs in wok to create an omelet. Make sure it is well cooked showing golden brown spots. turn it with spatula and cook both sides equally. Pull from wok and drain excess oil in paper towels.
  5. Loosen cold rice with hands, add half tablespoon of oil to your wok and add rice little by little ensuring it warms up evenly and it remains loose.
  6. Create a crater in the middle of the warm rice and add the onion and meat to warm without mixing with the rice until you can sense the fragrance of onion and warm meat.
  7. Fold rice gently and sprinkle pepper, salt and MSG to taste.
  8. Place your soy sauce in a spray bottle, spray small amounts and mix while keeping the rice over high heat.
  9. Chop your omelet into half inch squares and fold into mixture of rice keeping it on high heat for two extra minutes

Cold cuts freeze well. When storing in the freezer you should consider placing the package inside a freezer ziploc or wrapping with freezer paper to extend the shelf life.
