I am not a native English speaker and as such I am always hesitant to blog. To overcome my confidence issues I have been using this grammar checker

It is very formative to be able to see the options I can take in terms of correcting my work. It is also pretty nice to realize that I am not as limited as I perceive myself to be when it comes to fluency of the English language.

For most non-natives the bigger challenges relate to use of proper tenses and the tendency to confuse certain words. I often catch myself typing these instead of this and lye instead of lie.

Grammarly is a paid service but you can try their application for free. If you are also a little hesitant to write in public you may want to give it a try

Last week we were encouraged and challenged by many of our fellow bloggers to give. This week as I continue to receive first hand accounts of the challenges in Haiti and the impact it has had around the world I want to ask you to join me in giving freely one of the most challenging gifts. The gift of intentional prayer and fasting. Overwhelmed by our busy days we pray for abstracts pleading God for His mercy during this crisis. We can pray for more than abstracts. As the storm calms and the dust settles new issues arise.

This list includes specific items to include in your prayers:

Pray for fuel and fuel resources to become available. Lack of fuel is slowing food distribution.

Pray for Mr. Ban Kee Moon to be filled with a spirit of wisdom and compassion as he leads UN decision that will impact Haiti long term.

Pray for food. As of yesterday the World Food Program had only reached 97,000 people. Port au Prince is home to over one million.

Pray for generators and portable AC units to work at field hospitals and triage facilities.

Pray for the hand of the Lord to reduce plagues and vermin such as flies which are common when you have rotting corpses.

Pray for precious water

Pray for Dominican Republic. There is historic animosity which is now exacerbated by the crisis.

Pray for the preservation of limbs and the reduction of gangrene.

Pray for missionaries, doctors and soldiers

Pray for operation Pierre Pan

Pray for availability of pain killers

Pray for the Lord to intervene as sterilization supplies are limited and doctors are resorting to Vodka and other sprits.

Pray for emotional healing

Pray for our home churches to become the hands of Jesus in terms of long term provision

As you are praying for Haiti, please don't forget to also pray for Burma. Last year they lost over 134,000 people due to a hurricane. This year they have a plague or rats that is causing for severe famine.

The pantry version is a bit more casual and requires usually only that you purchase one avocado for the Guacamole

INGREDIENTS

12 corn tortillas
1 jar of coleslaw
1 cup of guacamole
1 jar of jalapenos or taco sauce for garnish
12 wieners from your freezer
ketchup and mustard

Heat tortillas in the microwave, the wieners must be first boiled then grilled in a pan, everything else is a garnish in the same way you would assemble a hot dog.

Eat From The Pantry Menu Week Three

My pantry is a Cornucopia connected to an infinite supply of random food items. What is a girl to do with 11 varieties of instant mashed potatoes, Adolphus rice galore and more apple sauce than Washington State?

My husband agrees to frugality insofar as we can eat variety. His definition of variety is far more complex than mine. For example: no pasta two days in a row, no food from the same ethnic origin two dinners in a row (With the exception of salsa verde and chicharrones which he could eat daily until the day of his death).

This week I will be sharing one recipe each day based on pantry and freezer items and complemented with fresh produce and fruit.

Lend To The Lord

The heart of our family is very near and dear to Haiti. Last year the Lord blessed us with the opportunity to fund a bank for a small community bank via Hope International.

I am humbled by the realization that my small readership which labels themselves as frugalistas, SAHM, miserly budget queens, recently unemployed etc. are in fact part of the top 10% richest in our planet.

A couple of days ago I stopped by Kroger and purchased $28 of groceries with coupons with an overage of $1.54 I smiled as the cashier handed me money. My receipt read 102% savings. My heart read it as 102% blessings. Jesus sweetly reminded me of Isaiah 55:1-3. How blessed we are! How merciful is He!

Giving ministers to the poor & afflicted but it also ministers to me. It reminds me that I am not in control, it softens my heart of rock into flesh, it places my trust in the one who lovingly promises my daily bread.

Our church family like many others is somewhat paralyzed by fear of the current economy. In an effort to minister to our sisters and brothers in Christ and encourage giving yesterday we offered an anonymous match up to the monthly missions offering which will now be pointed to Haiti (We are praying for at least $1,600). Normally our church members bring their change jar to contribute towards this offering. Our desire is that this match inspires them to give sacrificially and bring the best to the altar that they may bless others and be blessed.

I was hesitant to post about giving in fear that it may be construed as vanity. However; inspired by the love and selflessness of many bloggers who have graciously offered to match based on post blogs I am happy to share with all of you. For more inspiring links visit www.moneysavingmom.com

In tandem with giving it is crucial that we pray. God is listening and He wants us to speak. To help you as you pray here is the list I compiled for our use at home:

Pray for the weather to be mild and rain-free as many no longer have a roof

Pray for God to comfort those that are perishing under the rubble

Pray for supernatural strength for doctors, nurses and rescue workers

Pray for clean water

Pray for relief distribution to take place with transparency, expediency and honesty

Pray for God to soften our hearts as we give for immediate needs

Pray for vision and long term commitment from all of us to not forget Haiti after the cameras are gone

Pray for sound air traffic control

Pray for quick rebuilding of port facilities and piers

Pray for the softening of hearts in Dominican Republic as they will have an even larger influx of refugees

Pray for a color-blind heart of adoption around the world

Pray for a time of harvest and restoration

Pray for hope

As you prepare your hearts for giving seek to give with the heart of Christ. Give freely, give generously, give lovingly, give sacrificially.

Power Shopping 101

Someone emailed me asking my strategy towards shopping and how to get started on the path towards frugality. Each family is different but for us these are the key points:

If you don't have a budget begin by tracking your expenses for a couple of weeks and documenting your key or repetitive purchases. Once you know how much you are spending begin by aiming towards 80% of your average.
Initially I distributed my budget giving me an allowance to stockpile. This allowed me to spend money on items I did not need immediately. Having a stockpile budget is particularly important for Pharmacy Games such as CVS, Rite-Aid and Walgreens. Crystal teaches you how here.
Select your top 5 stores. For me it is CVS, Walmart, Target, Kroger and H Mart.
From your budget set aside $5.00 each week towards bulk purchases. Also add any surplus you may have at the end of the week towards this fund.
If no sale is available high value coupons should be used in your cheapest store. Coupons with potential for doubling or tripling should be used at stores offering these programs.
Set aside 10 minutes each day for internet coupon printing. High value coupons reach limit fast
Set aside a night a week for menu planning a coupon cutting.
Plan your menu against the items already available in your pantry and only buy whatever extras you need. Use your surplus to buy items on sale
It is ok to buy meat from the daily specials rack. Freeze it or use it right away.
Buy your rice at the Indian Store your beans at the Mexican store.
Vegetables are cheaper and more varied at ethnic stores. I like Fiesta and H-Mart.
Take advantage of the gift card offers by Target. Combined with coupons these offers are often great fun. Keep your gift card for rolling into the next offer
Load all digital coupons to all store cards.
Go to a store with grains and nuts by the pound and buy really small amounts of dry fruit and nuts to add variety to many dishes.

We currently spend $40 per week. This includes all groceries, toiletries and cleaning supplies. We cook all three meals at home and I pack lunch for my husband.

I was selected to host a party celebrating the delicious wonders of Avocados from Mexico. The lovely marketers at www.houseparty.com just shipped a box full of goodies to help me host. This week the sales and deals are a bit low. This coincides with marketing strategies which keep the best deals aligned with the timing in which most people receive paychecks. This coming weekend we will be traveling to the Desiring God Conference in Minneapolis. We are proud of our costs so far. Separate from the conference fees we were able to get super saver fares with American for $69 each way. For our hotel we selected Hotwire and snagged a deal for $61 per night at the Hilton. I will be shopping for car rental probably also using Hotwire.

I invite you to celebrate your blessings and contemplate upon the goodness of The King as you consider the following statistics:

Friday's Chinese Take Out (Fried Rice)

Starting today each Friday I will post an easy and affordable Chinese recipe to help you quench the cravings for take out. Today we start with:

Fried Rice

3 cups of leftover steamed rice stored overnight in the refrigerator
3 eggs
5 green onions (half a bunch)
5 slices of smoked ham or smoked bacon precooked
1/2 cup of soy sauce
1/2 teaspoon white pepper (adjust to preference)
1/2 teaspoon MSG I prefer Ajinomoto over Accent (you may skip this part if you are allergic)
4 tablespoons of oil

-optional ingredients-
leftover cooked shrimp
sauteed cubed carrots or frozen peas
leftover cooked chicken
water chestnuts

UTENSILS
Wok or large skillet
mixing bowl
clean spray bottle
wooden spoon
spatula
paper towels

STEPS

Chop onions and meat into small squares and set aside
Heat wok or skillet with 2 tablespoons of oil until a drop of water sizzles.
Crack eggs open and season with a pinch of white pepper, salt and MSG.
Pour eggs in wok to create an omelet. Make sure it is well cooked showing golden brown spots. turn it with spatula and cook both sides equally. Pull from wok and drain excess oil in paper towels.
Loosen cold rice with hands, add half tablespoon of oil to your wok and add rice little by little ensuring it warms up evenly and it remains loose.
Create a crater in the middle of the warm rice and add the onion and meat to warm without mixing with the rice until you can sense the fragrance of onion and warm meat.
Fold rice gently and sprinkle pepper, salt and MSG to taste.
Place your soy sauce in a spray bottle, spray small amounts and mix while keeping the rice over high heat.
Chop your omelet into half inch squares and fold into mixture of rice keeping it on high heat for two extra minutes

Enjoy!

Cold cuts freeze well. When storing in the freezer you should consider placing the package inside a freezer ziploc or wrapping with freezer paper to extend the shelf life.

Buying Affordable Vegetables

If you live in the Northern Suburbs of Dallas you may find it challenging to find an assortment of fresh vegetables and fruit at an affordable price. When it comes to produce there is very little couponing to be done and there are never rebates. If you are new to the area here are a few recommendations that may prove useful:

Fiesta Supermarkets There is a Plano and a Carrollton location. I prefer the Carrollton location which is in the intersection of Beltline and Josey Lane.
Super H Mart This is a very large Korean supermarket with very affordable fish, veggies and fruit. They have a large variety of exotics at reasonable prices. Avoid Sundays due to overcrowding.
El Rancho This is a new addition to the hispanic themed supermarket. Great for staples such as tomatoes and onions.
